This study proposes the development of an optimization model to support decision-making and aggregate production planning in the bakery industry, using the company Pã o as a case study. Initially, a linear programming-based model was developed to minimize total costs involving raw materials and labor. Subsequently, the model was enhanced by incorporating inventory control for raw materials, safety stock concepts, and periodic review policies. Additionally, a financial modeling was designed to assess the feasibility of replacing the existing gas oven with electric ovens powered by a solar energy system. The results demonstrated significant operational and financial gains, highlighting the potential of the proposed tool to support both strategic and operational decisions.
